History

We've all heard of lettuce. And it's likely that most people have eaten lettuce green leaf. The word is commonly used to generally describe the greens in a salad. However, "lettuce" itself is known scientifically as Lactuca sativa, and it's a unique and wonderful green crop. Lettuce was likely first cultivated in Ancient Egypt, where its seeds were first used to produce oil. Eventually, the ancient Egyptians started to realizing the benefits of eating the leaves as well, and the habit quickly spread to the Greek and Romans.

By 50 AD there were already multiple types of lettuce being grown, and lettuce appears often throughout medieval writings as well. Starting in the 16th century Europeans began developing many more varieties of the plant, and by the mid 18th century lettuce that still grows today began sprouting. During the earlier part of the 20th century packing, storage and shipping technologies were developed that drastically improved the lifespan of lettuce. And by the 1950s, production was completely revolutionized with the development of vacuum cooling.

Grow.Bar® Recipe - Pear & Pomegranate Salad

Ingredients:

  • 1 organic pear
  • 2 tablespoons pomegranate juice
  • 1 tablespoon vegetable oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon (or spicy) mustard
  • 1/2 cup pomegranate seeds
  • 1 teaspoon organic agave syrup
  • black pepper (to taste)
  • 2 cups Grow.Bar organic lettuce green leaf (microgreens)

Directions:

  1. Separate lettuce microgreens into 2 equal portions and place in different bowls. 
  2. Cut the pear in half, remove the core and slice.
  3. Divide the pear slices & pomegranate seeds between the bowls of lettuce and lightly toss.
  4. Mix the vegetable oil, pomegranate juice, lemon juice, mustard, agave and pepper in a saucepan. Bring to a boil, then lower heat and simmer for about 2 minutes (stir frequently).
  5. Once the sauce thickens slightly pour the warm dressing over the salads.
