Grow.Bar Organic Seed.Kit® - Classic lettuce green leaf

We've all heard of lettuce. And it's likely that most people have eaten lettuce green leaf. The word is commonly used to generally describe the greens in a salad. However, "lettuce" itself is known scientifically as Lactuca sativa, and it's a unique and wonderful green crop. Lettuce was likely first cultivated in Ancient Egypt, where its seeds were first used to produce oil. Eventually, the ancient Egyptians started to realizing the benefits of eating the leaves as well, and the habit quickly spread to the Greek and Romans.

By 50 AD there were already multiple types of lettuce being grown, and lettuce appears often throughout medieval writings as well. Starting in the 16th century Europeans began developing many more varieties of the plant, and by the mid 18th century lettuce that still grows today began sprouting. During the earlier part of the 20th century packing, storage and shipping technologies were developed that drastically improved the lifespan of lettuce. And by the 1950s, production was completely revolutionized with the development of vacuum cooling.

Health Benefits

lettuce green leaf is a super low calorie food, and it's super good for maintaining healthy weight (one shredded cup of mature lettuce greens has only about 12 calories). It contains valuable fiber and cellulose as well. The daily dose of fiber will keep your digestion healthy and its vitamin C and beta-carotene contents work together to prevent the oxidation of cholesterol. This helps fight the build up of plaque, so it's also super good for your heart health.

The white fluid that you see when you break or cut lettuce leaves is called lactucarium. This has relaxing and sleep inducing properties similar to opium, but without the super strong side effects. Sort of like koalas eating eucalyptus, which is a plant that also has calming effects. The minerals in lettuce help to remove toxins in your system as well, helping you maintain healthy energy levels and sleep patterns.
