Tacos & Tequila: A Fiesta With Microgreens!


In the 5 years leading up to 2015, increase in the immigrant population and domestic adaptations of Mexican food have aided the rise of Mexican restaurants and cuisine in America. As a result, these major trends are expected to continue to rise through 2020. Currently, Mexican foods are the 3rd most popular, proceeded only by pizzerias and varied menus (IBISWorld: Mexican Restaurants In America).

Even the hamburger comes in at 4th most popular food among Americans. It's clear - Mexi-Merican food is a thing. And possibly a super healthy option (cilantro, avocados and tomatoes all have big nutritional value). For Grow.Bar users, incorporating homegrown microgreens can naturally inspire Mexican nights at home. The cilantro literally goes with everything; margaritas, salsa, guacamole, tacos and more.

And who doesn't love a good taco Tuesday?! We welcome fiestas any day of the week, and encourage our Grow.Bar community to hop on the trend. There are endless options for creating snacks, drinks and dishes. But we're going to give our readers the best cocktail and accompaniment recipes we've got. First up is our cilantro & lime margarita. It's the perfect way to start the party. 

Grow.Bar Micro Cilantro & Lime Margaritas


  • 1.5 ounces fresh squeezed lime juice (about 1-2 limes juiced)
  • 1 ounce or less fresh squeezed orange juice (about 1/2 an orange juiced)
  • 2 ounces organic tequila blanco (organic tequilas, like 4 Copas Blaco, are 100% blue agave).
  • 1 tablespoon agave nectar or honey
  • ¼ cup fresh Grow.Bar cilantro microgreens (stems cut)
  • A cup of ice
  • Course sea salt (optional)
  • Lime wedge (for garnish)


  1. Combine lime juice, orange juice, agave or honey, tequila and cilantro in a cocktail shaker.  Strain into an ice-filled rocks glass. Garnish with lime wedge.
  2. Fill shaker with ice and shake firmly. Up and down motions are best, with one hand on the bottom and one on the top.
  3. Shake until the outside of the shaker becomes frosted (about 20 - 30 seconds)
  4. If you want a salt, lightly run a lime wedge around the rim of your margarita glass. Place salt on a flat plate and dip the limed rim of the glass in the salt.
  5. Put fresh ice in the margarita glass and strain mixture.
  6. Garnish with lime wedge and serve.

*You can spice up this recipe by adding a teaspoon of chopped peppers before shaking. And feel free to experiment with garnishes by including chilli spices, pepper and old bay-type seasonings to your salted rim. Have fun and get creative.

Grow.Bar Micro Cilantro & Lime Guacamole


  • 2 medium avocados
  • 2 1/2 tablespoons fresh squeezed lime juice
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground coriander
  • Pinch ground cumin
  • 3 tablespoons chopped fresh Grow.Bar cilantro microgreens
  • 1 teaspoon minced jalapeño


  1. Halve the avocados, remove the pits and scoop out the flesh with a spoon. Place in a mixing bowl.
  2. Pour the lime juice over avocados and add the salt, coriander, and cumin.
  3. Smash the avocados with a (preferably wooden) spoon. Stir until sufficiently smooth.
  4. Add the Grow.Bar cilantro microgreens and jalapeño.
  5. Test the mixture and add more lime juice, cilantro, and salt to taste.
  6. Serve with organic tortilla chips or in tacos, burritos or salads.

Grow.Bar Micro Cilantro & Lime Salsa


  • 30 ounces diced tomatoes (drained)
  • 1 onion, chopped (about 1/2 cup)
  • 2 cloves garlic (chopped)
  • 1/4 cup fresh Grow.Bar cilantro microgreens
  • 1 tablespoon fresh squeezed lime juice
  • 1/2 teaspoon coarse sea salt
  • 2 fresh jalapeños, seeded & finely chopped


  1. In a large bowl, simply mix together and stir all ingredients.
  2. Serve with organic tortilla chips or in tacos, burritos or salads.

Tacos are the easy part (at least we think so). Their structure and design are simple and easy. First decide if you want meat, fish or veggie tacos, and if you want to use organic corn or flour tortillas. Cook the protein, then add chopped onions, tomatoes and other vegetables of your choice (corn, carrot, pepper, etc). And last but not least, top with your favorite Grow.Bar microgreens instead of the traditional lettuce.

Like a salad, anything goes if your taste buds love the combination. For those of you who prefer burrito style, add some cooked rice. And if you want crunchy tacos, then grill or bake the tortillas slightly before serving. There are even recipes out there for homemade tortillas if you want to go all in.
