What is Kohlrabi?

Kohlrabi is a member of the Brassica family, which also includes cabbage, broccoli, cauliflower, kale and collard greens (to name a few). The plant is native to the European region and there are two main varieties that exist - white and purple. Kohlrabi has a similar taste and texture as a broccoli stem or cabbage. However, its flavor is more mild than broccoli and sweeter than cabbage. And the younger plants (like our delicious microgreens!) have an extremely pleasant taste with a rich flavor profile.

A team of scientists from Yale University were already studying these tiny greens back in 1967. Their results "showed that young pea seedlings grown in light contain significant levels of tocopherol (vitamin E)" (healthwithfood.org). These studies also showed that the young pea leaves produce large amounts of Vitamin K, essential to normal blood-flow and bone health.

A 50g bag of pea microgreens (also called shoots or tendrils) "offers more than half of the RDA for vitamin C, a quarter of the RDA for vitamin A and significant amounts of folic acid". They are low in fat and make an excellent  salad, just add some dressing.

The leaves are packed with iron and the plant has similar characteristics to spinach. It's fat free, cholesterol free and includes vitamins A and C, as well as some calcium and potassium. The juice from the leaves contains carbohydrates, proteins and minerals and has been used to treat things like digestive issues and hemorrhage conditions. And regular consumption of amaranth leaves will ease overall digestion and help with healthy weight management. The Aztec's had it right - everyone should really be consuming Amaranth daily.
